Applesauce-Carrot Cake With Lemon Cream Che
Ingredients


CAKE



2 cup All-purpose flour

2 tsp Baking powder

2 tsp Baking soda

3/4 tsp Salt

1 tbsp Ground cinnamon

1 tsp Ground allspice

1 tsp Fresh-grated nutmeg

1/2 cup Drained canned crushed pineapple in unsweetened juice

1/4 cup Raisins

1/2 cup Pecan or walnut pieces

1 cup Sugar

3 large Eggs

1 cup Packed dark brown sugar

1 1/4 cup Bland vegetable oil

1/2 cup Applesauce

2 tsp Pure vanilla extract

2 cup Finely shredded peeled carrots (about 4)

2/3 cup Shredded sweetened coconut



FROSTING



8 oz Cream cheese (regular or "light" but not nonfat), softened

1/2 Stick unsalted butter, softened

1 cup Confectioners' sugar

1 small Lemon, Grated zest and juice of

1/2 tsp Pure vanilla extract

1/4 tsp Lemon extract
