Black Bean And Rice Salad
Ingredients
2 cup Cooked or canned black beans - (rinse & drained canned)

2 cup Cooked rice

1 1/2 cup Fresh cilantro

1/4 cup Lime juice

3/4 cup Oil

1/2 cup Chopped onion

2 Garlic cloves, crushed

Salt

Freshly ground black pepper

Preparation
Mix the beans, rice, and cilantro together in a bowl. Place the lime juice in a small bowl and whisk in the oil. Add the onion and garlic and toss with the rice and beans. Add salt and pepper to taste.
