Cheese- And Fruit-Topped English Muffins
Ingredients
CYGNUS -- HCPM52C

4 Whole wheat English muffins

3/4 cup Low-fat riotta cheese

Split and toasted

1/4 tsp Finely shredded lime peel

2 Kiwi fruit -- sliced or

2 tsp Lime juice

1 cup Sliced strawberries

1 tbsp Sugar

Or peaches

1/8 tsp Ground nutmeg

Preparation
* In a small bowl, combine riotta cheese, lime peel, lime juice, sugar, and nutmeg. Spread cheese mixture evenly over toasted muffin halves. * Top each muffin half with kiwi fruit slices, strawberry slices or peach slices.
