Cheesy Chile Toast
Ingredients
7 oz Green Chiles, Diced

8 oz Monterey Jack Cheese, Shredded

3/4 cup Red Bell Pepper, Minced

1/2 cup Mayonnaise

4 English Muffins, Halved

Preparation
Preheat the broiler. Drain the chilies and combine them in a medium bowl with the cheese, bell pepper and mayonnaise.

Stir until well blended. Arrange the muffins in a single layer on a baking sheet. Broil 3 to 4" from the heat about 2 minutes, until brown.

Remove and spread cheese mixture over the bread. Return to broiler and broil about 4 minutes longer, until the cheese melts.

Watch carefully.

Cut each into quarters and serve.
