4 large Boned chicken breast
8 slice Prosciutto, or cooked ham
8 slice Swiss cheese, Gruyer, Jack or cream cheese
Thyme, optional
1 Egg, beaten
Bread crumbs
3 tbsp Butter, for frying

Prepare chicken breasts by cutting lengthwise, making a total of eight pieces. Place between plastic wrap and pound with a mallet until each portion is no more than 1/8 inch thick. Place one slice of prosciutto and a slice of cheese on the chicken. Sprinkle a little thyme if you like. Roll chicken to enclse filling. Coat with flour and dip in one beated egg. Then roll in dry bread crumbs. In a large fry pan melt 3 tablesppons butter and add chicken rolls. cook 15 minutes. Turn frequently to brown all sides. Transfer to warm serving dish.
6-8 servings.
