Cinnamon-Raisin Muffins
Ingredients
1 1/4 cup All-purpose flour

1/2 cup Regular, Quick or Instant CREAM OF WHEAT Cereal

1/2 cup Sugar

1 tbsp Baking powder

2 tsp Ground cinnamon

1 cup Milk

1 Egg, lightly beaten

2 tbsp FLEISCHMANN'S Margarine, melted

11 tsp Vanilla extract

1 cup California Raisins

2 tbsp Fruit juice, any flavor

Preparation
In medium bowl, combine flour, cereal, 1/4 cup sugar, baking powder and cinnamon; set aside.



In small bowl, combine milk, egg, margarine and vanilla; stir into dry ingredients just until moistened. Stir in raisins. Spoon mixture evenly into 12 greased 2 1/2" muffin-pan cups. Bake at 400'F. 18-20 minutes or until toothpick inserted in center comes out clean. Remove from pan; brush tops of muffins with fruit juice and roll in remaining sugar. Serve warm.
