1 1/2 cup Chicken broth
3 1/2 tbsp Soy sauce
2 tbsp Sugar
1 1/2 tbsp Mirin* or dry sherry
1 tbsp Fresh gingerroot, grated
8 oz Thin Japanese noodles, cooked & chilled
1 cup Cucumbers, thinly sliced
1 can (11 oz) Mandarin oranges, drained
1/4 cup Cilantro, chopped

* Mirin is a syrupy rice wine.
Mix broth, soy sauce, sugar and mirin or dry sherry in a small saucepan. Heat about 1 minute; stirring constantly, until sugar dissolves. Add gingerroot and chill.
To serve, pour over noodles; add cucmbers, oranges and cilantro; toss.
