Ingredients
2 Eggs, separated

1/2 cup Milk

1 cup Pancake mix

2 cup Fresh corn -or-

1 can (17-oz) whole kernel corn, drained

Preparation
Blend egg yolks & milk. Add pancake mix & stir until smooth. Fold in corn. Beat egg whites until stiff. Fold into corn mixture. Drop by tablespoon into hot fat...1/2 to 1 inch deep. Cook 4-5 minutes or until golden on both sides.
