1 medium Red Bell Pepper, cut in strips
1 small Onion, sliced
1 small Zucchini, sliced
1/2 tsp Oregano Leaves
1 tbsp Fleischman's Margarine
32 Premium Saltine Crackers, any kind
4 oz Reduced Fat Cheddar Cheese, shredded
2 cup Skim Milk
1 cup Egg Beaters® 99% Egg Substitute

In large skillet, over medium heat, cook and stir red pepper, onion, zucchini and oregano in margarine until tender. In lightly greased 9 x 9 x 2-inch baking pan, layer half each of the crackers, vegetable mixture and cheese. Repeat layers, ending with cheese.
In bowl, beat milk and egg product; evenly pour over cheese layer. Bake at 350° for 30 to 35 minutes or until knife inserted in center comes out clean.
