1 Medium cucumber, julienned
2 tbsp White vinegar
1 tsp Sugar
1 tsp Salt
1/2 Onion, peeled and sliced
12 Fresh red chili peppers slices, paper thin slices
1/2 cup Dry roasted peanuts, chopped
1/4 tsp White pepper, ground

In a deep bowl stir vinegar, sugar, salt and white pepper until well blended. Add the remaining ingredients, except peanuts, and toss with the marinade. Top with peanuts right before serving. Serve at once or cover and chill for no longer than 2 hours before serving.
NOTES : This is a condiment used with many Thai dishes. It is flavorful cool and refreshing. We have Canadian friends who also add green mango to this which turns it into a wonderful side salad. Recipe by: Jeff Smith, The Frugal Gourmet
