Peel onions and cucumbers, and cut into wafer-thin slices. Cover with salted ice-water and let stand in refrigerator for several hours. Drain, and add 1/4 cup water, vinegar, sugar, salt and pepper to taste. Cucumber-Onion Salad With Sour-Cream Dressing. After draining vegetables in recipe above, add 1/2 cup dairy sour cream and 1/2 cup tarragon vinegar. Garnish with chopped chives.
