Cucumber-Tomato Cocktail
Ingredients
1 medium Cucumber

2 1/4 cup Tomato juice

2 tbsp Chopped scallions and tops

1 tsp Worcestershire sauce

1 Lemon, juice of

2 tsp Grated horseradish

1/8 tsp Tabasco sauce

1/2 tsp Salt

1/8 tsp Black pepper

Parsley or watercress

Lemon wedges

Preparation
Peel cucumber and grate into tomato juice; add remaining ingredients. Cover, place in refrigerator for 2 hours. Strain, and serve garnished with parsley or lemon. Yield: 6 to 8 servings.
