1 cup Rice, Raw
3 tbsp Oil
3 Cloves garlic, minced
1 medium Onion, chopped
2 cup Chicken broth
2 cup De-boned chicken, cooked and cut up
1/4 tsp Saffron
2 tbsp Capers
1 small Canned peas
1 Tomato, chopped
Salt, to taste

Saute rice in oil with garlic and onions until brown; stirring continuously. Add the rest of the ingredients. Pour into a greased baking dish and bake at 400 degrees for 45 minutes covered and an additional 10-15 minutes uncovered. Any seafood such as shrimp, mussels or squid can be added and is delicious.
