Fatfree Fruit Muffins
Ingredients
1 1/4 cup Flour, white or wholewheat

1 cup Oat bran or oatmeal

1 1/4 tsp Cinnamon

1 tbsp Baking powder

1/2 cup Evaporated skim milk

1/2 cup Defrosted apple juice concentrate

1 Egg -or-

2 Egg whites or equivilent

1 Ripe banana, mashed -or-

1/2 cup Applesauce

1 cup Fruit, berries, diced peaches, pears; apples, raisins, whatever

1/2 cup Nuts, if you like

Preparation
Mix dry ingredients. Stir together wet ingredients except 1 cup fruit. Blend together wet and dry, add fruit and nuts. Bake 425 for 17 minutes.
