3 cup Quinoa, cooked
8 3/4 oz Can apricot halves, drained and chopped
1 Naval orange, sectioned
1 cup Seedless red grapes, halved
1/4 cup Scallions, sliced
1/4 cup Fresh parsley, chopped
1/4 tsp Black pepper
Salt

In a medium bowl, toss quinoa, apricots, oranges, grapes, scallions, parsley and black pepper. Season to taste with salt, if desired.
