Honey Balsamic Vinaigrette
Ingredients
1/2 cup Canned apricots, drained

1/3 cup Balsamic vinegar OR red wine vinegar

1/4 cup Honey

2 tsp Dijon mustard

1 Clove garlic, minced

1 tsp Dry Italian seasoning

1/4 tsp Salt and pepper

1 tbsp Olive oil

Preparation
In blender or food processor, combine apricots, vinegar, honey, mustard, garlic and seasonings; blend until smooth. With motor running, slowly drizzle in olive oil until combined. Makes 1 cup.



Prep: 10 minutes



Nutrients Per l/4 Cup Serving: 134 calories, 3.5 g fat (23% calories from fat), 0 mg cholesterol, 0.35 g protein, 26 g carbohydrates, 0.5 g dietary fiber, 171 mg sodium.
