4 White or golden beets - cooked, peeled & chopped
1 tsp Chopped lovage or parsley
2 tbsp Balsamic vinegar
5 tbsp Olive oil
2 Eggs, hard-boiled
1/2 cup Home made croutons
Preparation
In a salad bowl combine lovage or parsley, vinegar and oil. Add beets, toss to coat and marinate for 1 hour. Add mache, toss, garnish with eggs and croutons.
