1 1/2 tbsp Extra virgin olive oil
2 tsp Minced fresh rosemary, or 1/2 teaspoon dried rosemary
1 tsp Minced fresh thyme, or 1/4 teaspoon dried thyme
1/2 tsp Minced garlic
1/4 tsp Salt
1/8 tsp Crushed red pepper
1 lb Lowfat mozzarella cheese, 3/4" cubes

Mix all ingredients except cheese in a medium bowl. Add cheese and stir gently to coat. Cover and refrigerate at least 24 hours or up to 5 days.
