Mashed Potatoes With Swiss Chard
Ingredients
8 Potatoes, peeled/quartered

1/2 lb Swiss chard

1 cup (2 %) evaporated milk

2 tbsp Olive oil

Black pepper and seasonings, to taste

Preparation
Barely cover potatoes with water; cook 15-20 minutes until tender; drain. Meanwhile, steam chard until stems are tender. Mash potatoes; puree chard in blender or food processor; combine potatoes and chard. Add remaining ingredients, stir. Serves 6. Per serving: 221 calories, 4 grams fat.
