3 tsp Golden raisins
1/2 lb Penne pasta
2 tbsp Sliced almonds or more to taste
2 tbsp Olive oil
3 Garlic cloves, minced
1 lb Spinach, coarsely chopped
1/2 tsp Vegetable bullion
2 medium Plum tomatoes, diced
3 tbsp Grated cheese or more to taste
3/4 tsp Salt

1. Prepare penne pasta according to package directions.
2. Meanwhile, in a 12 inch skillet, over medium heat, cook almonds and remove from skillet.
3. In same skillet, add oil and saute garlic, increase heat and add spinach, raisins, bullion and salt. Saute until spinach just wilts. 4. Drain pasta and return to pot. Add spinach mixture and tomatoes and heat through. Toss with almonds and cheese.
