2 Sweet red peppers, roasted

3 tbsp Cream cheese

1/2 tsp Cumin, or to taste

2 tbsp Finely chopped sun-dried tom

1 Clove garlic, minced

1/4 cup Minced sweet onion (Vidalia,

3 tbsp Olive oil

2 tbsp Chopped cilantro

Salt & pepper to taste

*Note: Sun-dried tomatoes should be oil-packed type. Process all in food processor until well blended. Serve chilled with crackers.
