Rotel Cornbread
Ingredients
3/4 cup White Cornmeal

3/4 cup Yellow Cornmeal

3 tbsp Flour

1/4 tsp Soda

1 1/2 tsp Baking Powder

1 tsp Salt

2 tbsp Vegetable Shortening, melted

1 cup Buttermilk

1 Egg, beaten

1 Jalapeno, finely chopped

10 oz RO*TEL Tomatoe w/Green Chili

Preparation
Mix all ingredients together. Bake at 425 degrees for 25 to 30 minutes. This recipe comes from a book "Snake, Rattle, and RO*TEL."
