Rum Mincemeat Muffins
Ingredients
1 1/2 cup Flour

1/4 cup Sugar

2 tbsp Baking powder

pinch Salt

1/2 cup Butter

1/2 cup Apple juice

2 Beaten eggs

1 cup Mincemeat

1/2 cup Dark rum

12 Sugar cubes

Preparation
Mix dry ingredients in a bowl & set aside. Melt butter in a saucepan & add apple juice & beaten eggs. Stir the liquid into the dry ingredients, then add mincemeat. When just mixed, spoon into well greased muffin tins filling only about 2/3 full. Soak sugar cubes in rum & place 1 cube on top of each muffin. Bake for 20 minutes in 375 oven. Serve warm.
