1 lb Italian sausage links, casings removed
2 tbsp Olive or vegetable oil
1 medium Onion, sliced
2 Garlic cloves, minced
2 Fresh Idaho potatoes, cut into 1-inch pieces
1 Green or red pepper, cut into strips 1 teaspoon dried basil leaves
1/2 tsp Salt
1/8 tsp Pepper
1 medium Tomato, cut into chunks
1/4 cup Chopped fresh parsley

In 3-quart microwave-safe casserole combine sausage, oil, onion and garlic. Cover loosely with plastic wrap; cook on High 7 to 9 minutes or until sausage is cooked, stirring twice to break up meat. Stir in potatoes, green pepper, basil, salt and pepper. Re-cover; cook on High 14 to 16 minutes or until potatoes are tender. Stir in tomatoes and parsley. Re-cover; let stand 5 minutes .
