Southwest Cactus Salad
Ingredients
15 oz Jar Nopalitos, drained,

Rinsed, and diced

4 Green Onions, ends trimmed,

Minced

3/4 lb Roma Tomatoes, cored and

Finely chopped

1/4 cup Lime Juice

2 tbsp Fresh Cilantro, minced

Salt

Preparation
In a bowl, combine nopalitosm onions, tomatoes, lime juice, and cilantro. Mix and season to taste with salt. Serve, or cover and chill up to 2 days.
