Spicy Chilled Chi-Nese Noodles
Ingredients


INGREDIENTS



1 lb Chinese noodles

1 1/2 tbsp Oriental sesame oil

1 medium Cucumber, shredded

4 oz Baked ham, shredded

1/2 tsp Salt

8 oz Cooked chicken

1 Carrot, shredded

1 1/2 tbsp Toasted sesame seeds



SPICY SAUCE



3 tbsp Soy sauce

1 1/2 tbsp Vinegar

1 tsp Sugar

1/2 cup Chicken stock

3/4 tsp Tabasco

3 tbsp Scallions, chopped

1 1/2 tbsp Sesame oil

Preparation
Preparation : Bring a large kettle of water to a boil; add 1/2 tsp.salt and the noo-dles. Boil 1 1/2 minutes, until the noodles are just done. Drain and rinse with cold water to cool. Drain well and toss with 1 1/2 Tb. ses-ame oil. Mix the ingredients for the sauce and set aside. Shred the chicken, ham and vegetables. To serve, place the noodles on a platter. Surround with the meats and vegetables. Top with the sauce and sprinkle with the toasted sesame seeds.
