Spicy Noodle Salad
Ingredients
12 oz Spaghetti

2 tbsp Sesame oil

1 1/2 cup Carrots, grated

1 1/2 cup Bean sprouts

4 Green onions, chopped

1 tbsp Orange rind, grated

1/4 cup Orange juice

1/4 cup Tahini [optl]

3 tbsp Soy sauce

1 tsp Granulated sugar

1 tsp Hot pepper sauce

1/2 cup Peanuts, chopped

1/4 cup Fresh coriander, chopped

Preparation
In large pot of boiling salted water, cook spaghetti for 8-10 minutes or until tender but firm; drain and rinse under cold water. Drain well and transfer to bowl; toss with sesame oil. Add carrots, bean sprouts, onions and orange rind.



Combine orange juice, tahini, soy sauce, sugar and hot pepper sauce; toss with spaghetti mixture. Sprinkle with peanuts and coriander.

Per serving: about 535 calories, 18 g protein, 17 g fat, 79 g carbohydrate good source iron, very high source fibre.
