4 lb Short Ribs Well Trimmed, 2 1/2 Wide
3/4 cup Onion, Chopped Coarsely
4 Cloves Garlic, Quartered
3 Jalapeno Peppers, Seeded & Chopped
2 tbsp All Spice
1 tbsp Ginger, Minced
2 tbsp Veg Oil
1 tsp Fresh Grated Nutmeg
1 tsp Salt
12 Fresh Bay Leaves

In food processor combine onion, garlic, jalapeno peppers, allspice, ginger, oil, nutmeg and salt. Puree. Put mixture into bowl and lay the short ribs down , dice cut the 2 1/2 in short rib cubes as follows. Cut halfway to bone every 1/2 inch deep. Combine ribs with marinade, cover and marinate 4-5 hour in refrigerator. Preheat grill 5 minutes. place short ribs on grill bone sid down. Cook 4-5 minutes, turning three times during cooking time. May take longer than the 4-5 minutes, Brown on all sides.
