Spinach Salad With Orange Dijon Vinaigrette
Ingredients
3 tbsp Vegetable Oil

3 tbsp Orange Juice, Frozen Concentrate

1 tbsp White Wine Vinegar

1 tsp Dijon Mustard

1/4 tsp Salt

1/4 tsp Pepper

4 cup Spinach Leaves Or Salad Greens, Fresh, Torn

4 cup Bibb Lettuce, Torn

2 cup Mushroom, Sliced

Preparation
In large bowl, whisk together oil, orange juice concentrate, 1 tablespoon water, vinegar, mustard, salt and pepper. Just before serving, add spinach, Bibb lettuce and mushrooms; toss to combine. Makes 4 servings. Per serving: 142 cals, 4 g pro, 11 g total fat, 10 g carb, 3 g fibre.
