Ingredients
1 Endive or head of lettuce

2 lb Potatoes, peeled

1/2 lb Smoked bacon, diced

3 medium Onions, chopped

1/2 cup Water

Salt & pepper to taste

Preparation
Boil potatoes in salted water. Cut endive in small, longish pieces. Fry bacon & onion until golden brown. Mash potatoes, add half of bacon mixture & the water. Add endive & mix; salt & pepper to taste. At serving time, top with remaining bacon mixture.
