2 cup All-purpose flour
2 tsp Baking soda
1/2 tsp Salt
2 tsp Cinnamon
3 large Island eggs, well beaten
1 1/2 cup Sugar, *
3/4 cup Salad oil
2 cup Mangoes, chopped
1/2 cup Coconut, shredded
1/2 cup Macadamia nuts, chopped
1/2 cup Golden raisins

* less if mangoes are very sweet
Sift flour, soda, salt and cinnamon together, mixing well. Form a well in the center and mix in the rest of the ingredients, adding the fruit and nuts last. Pour into a greased and floured loaf pan and bake for one hour in a 350 degree oven.
BANANA NUT BREAD
You can use this recipe for Banana Bread by substituting 1 1/2 cups of mashed ripe bananas for the 2 cups of mangoes.
